Food Glorious Food

I haven't updated this page since creating it, but obviously I've been eating (A LOT and not all of it good :)) and actually managed to do some pretty good recipes so thought this Saturday morning when I've got a ton of stuff to sort out, clearing my diary and updating this page. So here  in no particular order, are some of the gastronomical delights I've  made and consumed over the last few months and shall endeavour to be a bit more organised :) with it in the future.

Marinated Alfalfa with tomatoes and avocado

I made this so long ago that I can't quite remember all the ingredients are but obviously avocado and tomatoes and knowing me the alfala was probably marinated in Pomegranate Molasses (an absolute staple in my pantry) and topped with toasted sunflower and pumpkin seeds for a hit of protein. I remember it being delicious.

Ingredients:
  • Plum and cherry tomatoes
  • Cucumber
  • Red and yellow peppers
  • Blackberries
  • Hemp seeds
  • Raw honey
  • Lime

 Chopped and tossed all salad stuff together, mixed a little raw honey with a squeeze of lime, poured over and topped with fresh blackberries and sprinkled me some hemp seeds over. YUM!

Hungry belly girl, no food in house, too jet lagged to go food shopping or cook anything yogurt compote life saver
Ingredeients:
  • Greek yogurt
  • Frozen berries
  • Sugar
  • Vanilla essence
  • Toasted sunflower and pumpkin seeds 

Had just got back from Sierra Leone in December and hungry as hell (as always) but too tired to go food shopping, so went to the corner shop to pick up some yogurt and use what was left in the freezer and food cupboards to make something to eat.
Made the compote by thawing my frozen berries with a dash of brown sugar (what else) and leaving it to simmer and cool. I then layered it in a cup and added the yougurt, topped it with toasted seeds. Hit my hungry spot right there.

 Raw Curry Plantain with tomato and avocado salsa and green beans  (inspired by the beautiful Chef Akhi)


One of the single most delicious raw dishes I've had in a long time.
Raw Plantain ingredients:

  • Two ripe plantain
  • Green pepper
  • Red chilli
  • Curry mix of cayenne pepper and turmeric
  • 1 lime
  • Coriander
  • Sprinkle of himalayan salt crystals

I chopped up everything and mixed in a bowl - that EASY!!

Raw Cacao and Maca Shake (another Chef Akhi inspiration)


Before doing my back in last week, I took a trip up to Planet Organic and stocked up on a big bag of cacao powder, hemp protein, and maca powder (all great for antioxidants, maca, great for hormone balancing, hemp protein, great for protein and a fantastic source of Omega 3). Came home and tried to blend my new buys with some coconut milk, my cacao nibs and my chai seeds. I never measure anything by the way so put in too much cacao. Bad, bad idea - soooooo bitter and the texture really weird. I struggled to drink it as I had paid WAYYY toooo much to let any of it go to waste. So went back to Chef Akhi's blog and saw that she had included a banana and dates. I don't do bananas (unless they're still slightly green) but I could do dates, so took a Holland and Barrett trip and bought a big bag of dates. Anyway, preamble over, I've perfected my cacao shake  recipe:


Cacao and Maca Shake ingredients:

  • About 4 tablespoons of cacao powder
  • About 2 tablespoons of hemp protein
  • 1 tablespoon of maca powder
  • 4-8 dates
  • 1 glass of coconut milk
Blend all on a high setting and luxuriate in the delicious goodness. Mmmmmmmm. 

Protein packed egg breakfast (inspired by a morning walk into work with Nadine and a pop into Pod)

Once upon a time, when the mornings were light and bright, me and Nadine decided to walk into work, and when we made it to Moorgate, she treated me a shake from Pod, but being the piglet that I am, I also went for a superfood scrambled eggs and toast. Soooo delicious and I revolved to make my own creation. So this is it:
Ingredients:

  • Eggs
  • Pumpkin and sunflower seeds
  • Tomatoes 
  • Chai seeds

Topped with parsley and served with a side of smoked mackerel and avocado. Yum!!!

Figs in Vanilla Port  (inspired by Marie Claire)


Love figs, but NEVER had them fresh before, so when I saw this recipe in Marie Claire's Fast Food. Simple and delicious.
Ingredients:

  • A dash of sugar
  • Halved figs
  • Muscato
  • Vanilla extract

I put the sugar, vanilla extract and muscato in a pan and stirred until the sugar dissolved. Put the figs in a bowl and poured the wine mixture over.

Summer berries in muscato (another Marie Claire inspiration)

 Raspberries and blueberries topped with muscato. Gets you a bit merry. :). Yum.

Lentil and mint soup - inspired by Stephane's Ramadan fast-breaking soup


This delicious soup was inspired by the lovely Stephane Hubert in Paris who always invited me to break fast with him during Ramadan. One evening he made the most divine lentil and mint soup which I tried to replicate when I got back. Can't remember all the things I put in it, but was delicious.
